Recycled Grilled Vegetables with a Zing!

With all these recipes that included grilled vegetables, chances are you have some leftovers you want to use up.  This recipe is so simple your 3 year old can put it together (probably not for your 3 year old to eat because it's spicy).  Put your cold grilled veggies in a bold, add some cheese, whether it's mozarella, feta or goat cheese, any will do. Sprinkle with hot sauce (I used Texas Pete's) and serve!
