Pistachio Stir Fry

 In a medium skillet, on low heat, add extra virgin olive oil (I used flavored wild mushroom and sage) and let three cloves of press garlic simmer.  Shred green squash and, slice yellow peppers and dice onions.  Add shredded green squash to olive oil and garlic mixture, followed by mushrooms, peppers, onions, shredded carrots, pea pods and spinach.  Let cook stirring frequently on medium low heat for 5 mins. 
 
 Add Pistachios and toss with hot sauce and ground pepper and stir for a few more minutes.  Serve or store.

Sweet Italian Sausage Soup with Green Squash and Orange Pepper

You will need
One container of Tomato and Roasted Red Pepper Soup from Trader Joes, S & S, or Whole foods
2 chive onions
3 cloves pressed garlic
1 Green squash (sliced or shredded)
1/2 orange pepper (diced)
3 basil leaves (chopped)
2 pieces of Italian Sweet Sausage (sliced or diced)
1 tsp crushed red pepper
1 tso sea salt
1 tsp ground pepper


1. Grill Italian suasage on grill or in a pan until brown remove and cool, slice sausage once cooled
2. Pour soup into pot and add pressed garlic
3. Let cook on medium for 5 mins
4. Add sausage, green squash, peppers, chives, basil, crushed red pepper, salt and pepper
5. Turn heat to low and let sit for 40 mins, stirring soup occasionally
6. Remove from heat and serve.
