3 tbsp extra virgin olive oil
1 tsp Sea Salt
1.5 cups of broccoli
7 pieces of asparagus
1 orange pepper
3 scallion onions
1 tbsp of pressed ginger
several pieces of sundried tomatoes
2 eggs
1/2 cup pistachios
Add olive oil to medium skillet on medium low heat and add ginger.
Chop your veggies while pan is heating up. Chop up broccoli, quarter the asparagus, slice the orange pepper, dice the scallions.
Add chopped broccoli and diced scallions.
Then add asparagus, sundried tomatoes and sea salt.
Let cook and stir often for 5 mins.
Crack one egg into the skillet and mix with veggies.
After egg is cooked remove veggies from pan and plate.
Use same pan to fry the other egg.
Once egg is fried place on top of stir fry and add pistachios.
You can add hot sauce (chili sauce whatever) for a little extra kick, tastes great!
