I've been on a health kick recently and got sick of eating the same old boring salad so I created a delicious salad that's quick and easy and very colorful too!
The ingredients I used were:
a handful of arugula
1 cup orange and yellow peppers diced
1/4 cup red onion diced
1/4 cup blueberries
1/2 cup cherry tomatoes
1/4 cup low fat feta cheese
I combined this all in a bowl and made my own dressing by mixing the following ingredients
Ingredients for the dressing are:
1/4 cup of Extra Virgin Olive Oil
3 tablespoons of honey
1 tsp minced garlic
pinch of pepper
Use dressing sparingly and you will have some to save for another salad!
