Blood Orange and Chili Pepper Tilapia and tri-color quinoa

1lb tilapia fillets
1 tbsp of ground chili powder
1 tsp pink Himalayan sea salt
1 lemon (squeezed)
1 tbsp ground pepper
1tbsp extra virgin olive oil
1 blood orange (sliced)


Season fillets with all ingredients.  Place orange slices on top. Broil for 7 mins and serve.



Buffalo Rae's Turkey Burgers

1lb turkey meat
1 cup bread crumbs
1/3 cup mustard
1/3 cup yellow onion diced
1 tsp salt
1 tsp pepper

Combine all ingredients and form patties.  Grill medium heat 4 minutes on each side.  Add avocado and wickles (wicked good pickles) and enjoy.





Alli Galli's Fritada

Peppers, onions, spinach, mushrooms, basil and eggs.

Combine all ingredients.  Heat in large skillet at medium low heat for 15 mins.  Place in oven at 350 for another 10 mins and serve.









Sausage, Peppers and Onions: Breakfast Style

1lb sweet natural Italian Sausage (make patties)
1 green pepper chopped
1/2 yellow onion finely chopped
2 eggs

In skillet on medium heat cook sausage.  About 4 minutes on each side.  Once you flip the first time after four minutes, add pepper and onions.  Remove from heat and cook 2 sunny side eggs up on skillet.  Place eggs on sausage and serve with your favorite hot sauce.

Deeps' Chickpea Salad

5 cups spinach (baby, chopped)
14 ozs chickpeas (drained)
12 red onion (finely chopped)
2 tbsp of mustard
1 tbsp balsamic vinegar
3 tbsps olive oil
salt
pepper

In food processor add spinach, mustard, vinegar, olive oil, salt and pepper.  Process until spinach is finely chopped.  Rinse chickpeas and pour in bowl.  Add Spinach mix and red onion.  Toss and Serve.


Pear and Shrimp Shishkabobs

31-40 pieces of shrimp (roughly 1.5lbs)
3 bell peppers
4 zucchini
1 yellow onion
1 red onion
2 pears


Chop veggies and pear.  Rinse shrimp.  Marinate in whatever sauce you'd like.   A homemade sweet thai chili and garlic sauce was used for this recipe. Place on skewers and grill for 20 mins on medium high heat.  Turn every few minutes.  Platter and serve.











Seared Ahi Tuna on Garlic Toast with Citrus


Slice garlic baguette thin.  Sear Tuna on all four sides for a minute each.  Slice tuna and top with blood orange slice.

Smoothie

Ginger, Carrot, Apple, raspberry, ice, orange juice



Low Country Boil

In a large pot of water add a ton of old bay seasoning.  Bring to a boil add crab, legs, shrimp, corn and potatoes.  Cook for 30 mins at a low simmer.
